What We Are Using This Year - Heart of the Matter



It's been a while since I've participated in a Heart of the Matter Meme, but I'm getting back on track with "school" stuff, so here's this week's post. The theme is "What We Are Using This Year".

If you can get your hands on a copy of a great book called "CookWise" by Shirley O. Corriher ... it might be an interesting addition to your food science studies. Corriher is a biochemist by training, but a chef at heart, and she often explains the scientific reasons for recipes turning out great (or not).... do you know which bowl is better for beating egg whites: stainless steel or copper? It also has 230 recipes in the 500-page book. (Wm. Morrow & Co, publisher.)
